Oh my gawd ya’ll, I didn’t realize just how far behind I was until - um - two minutes ago. I have H ready to go and should have it up before the 22nd (after all, my birth-week doesn’t start until the 23rd so any craziness will be on the down low, and we can safely say it isn’t “happy” as in happy birthday).

Blueberry Bran Muffins - my favorite!
ETA for Heather:
1 ½ cups bran cereal
1 ½ cups milk*
1 ¼ cups whole wheat flour*
1 teaspoon baking soda
½ cup sugar
1 egg
¼ cup oil
½ cup rinsed blueberries
*if using all-purpose flour, reduce milk to 1 ¼ cup.
In a medium sized bowl mix together the cereal and milk. Let soak for five minutes, or until the cereal has soaked up most of the milk and is soft. The stick-like cereal will absorb milk much better than the round buds. If using the buds, be sure to run them through a food processor to break them up, or you’ll be soaking for a long time.
In a larger bowl, mix together the flour and baking soda, set aside.
To the bran mixture, add sugar, egg and oil, blend thoroughly with a spoon or fork.
Pour the bran mixture into the flour and stir together, gently fold in ½ cup rinsed blueberries.
Bake at 400° for 20 minutes iregularg regualr sized muffins, 25 minutes if making large muffins.
Makes 12 regular sized muffins, 6 large muffins.
